Here is a photo of my Rajapuri banana bunch two weeks ago. I have been eating them as they turn yellow, a few bananas at a time.
Most literature states that when the first hand on the bunch turns yellow, that the whole bunch should be cut. I think this is true for commercial banana growers, growing commercial varieties. They have to ship the bananas and probably also have varieties that ripen nicely even when picked green.
I have found with the Rajapuri bananas that they are best when picked as ripe as possible and so I have been picking them, one by one, as they ripen. Still, they are best if they sit on the counter for a day. Even then, they turn brown very quickly, but they are still good even when brown. Once they turn black, then they taste overipe.
So, to make a long story short. Pick yellow, and let mellow on the counter for a day.
