I have some mango plants from seed, one of the seeds sent up more than one stock. Should one be cut off and it's in a one gallon pot should it be moved to a bigger pot? The plant is 5 weeks old.

Cool. It's polyembryonic. This means that the larger plant (or so I've heard) is the clone on the parent so you should remove the smaller one. However, they seem to be in a dead heat. Hmmmm....

PT is correct according to what I've heard too! And I understand if you are careful you can separate them and plant each one.....I've also heard that the most vigorous is the one that's truly "TRUE" to the parent mango...but I've got one where the vigorous shoot died, and others have told me the remaining three should still be pretty close to the parent, so they will get planted too, just to see.
By the way Bkaus - your new Manila is Polyembrionic too, so remember to plant your first seed from that tree. I waited till this year, believe it or not, -to start planting mango seeds - if I had done it earlier, well I'd be the Johnny Mangoseed of Palm Springs! Another aside, it took 3 years of growth of my manila to produce the first fruit - I believe all the Manila on the west coast are seedlings and they take longer than a grafted tree to fruit......just nature following the rules....

I'll wait and see if one dies back if not maybe try to separate them later.
