Just harvested my second bowl of persimmons from my four year old Fuyu. Non-astringent, hard as apples, and sweet as candy, even partially green. Persimmons are underrated trees for Phoenix, but need part shade conditions -- there's no way this tree can take full sun. I tried last year and lost all the fruit in July and by August all the leaves had turned crispy and had complete canopy loss by September. I actually thought I had killed the tree.
I'm going to build a decent size shade stucture for next year now that I'm happy with the fruit quality.
