what to do with frost burnt mango leaves/stems ?

If that tree was left unprotected during all four cold nights, then your tree is toast if it was a grafted tree.

As PT has mentioned here on this site, it's never cold enough to kill the roots of most tropicals here. At some point, you'll likely get a Manila mango growing from the base of the tree, especially if the tree came from Laverne Nursery out of California.

Well it is grafted, but it didnt come from laverne. It came from florida. So we will just have to wait and see. I think in Florida they use other type of roostock

You may want to contact the nursery out in Florida and find out what the rootstock is -- or just spend $20 and buy a seedling Manila mango from Lowes. When those freeze, you get Manilas coming back, and if it doesn't work out, you can return it if it's less than a year.
